Baking Mixes

Banana Bread Method: 

  • Combine all dry ingredients in a bowl.

  • In a food processor, blend your 2 bananas, 2 eggs, 1/3 cup of olive oil and 1/2 cup of maple syrup.

  • Add in 1/4 cup of filtered water.

  • Once the wet ingredients are combined, add in your dry ingredients.

  • I have left them out to make this mixture more suitable for everyone, however here is where you can stir through some add ins, such as walnuts, blueberries or dark chocolate chips. (blueberries or dark chocolate is usually my go to).

  • You can also halve an additional banana and place it on-top of the mixture, shown in the picture.

  • Bake in a 8x8 loaf tin, using non stick baking paper, spray olive oil or butter to grease your tin and ensure the banana bread does not stick.

  • Bake at 165 degrees celsius for approximately 55-60 mins, or when the banana bread is fully browned on top.

  • Slice and enjoy!

Banana Muffin Method:

  • Combine all dry ingredients in a bowl.

  • In a food processor, blend your 3 bananas, 1/3 cup of coconut oil, 1/2 cup of maple syrup & 2 eggs.

  • Add in 1/4 cup of filtered water.

  • Once the wet ingredients are combined, add in your dry ingredients.

  • Here I stirred through some dark chocolate chips.

  • Bake in cupcake tray, using spray olive oil or butter to grease your tray and ensure the cakes do not stick.

  • Bake at 165 degrees celsius for approximately 20-25 mins, or when the cakes are browned on top.

Lemon Bliss Ball Method: 

  • If you have the time, Soak your dates for 5-10 mins in boiling water.

  • Mix all dry ingredients with 2 tbsp of maple syrup in a food processor until combined

  • If mixture is too dry, add 1 tbsp of water.

  • Add 3 tbsp of lemon juice.

  • Roll into approximately 16 evenly sized bliss balls.

  • Roll in prepared coconut and store in fridge.

Note: I love adding lemon essential oil (food grade) into this flavour to further enhance the lemon flavour, if you have them on hand I highly recommend.

Cacao and Coconut Bliss Ball Method: 

  • If you have the time, Soak your dates for 5-10 mins in boiling water.

  • Mix all dry ingredients with 2 tbsp of maple syrup in a food processor until combined

  • If mixture is too dry, add 2 tbsp of water.

  • Roll into approximately 16 evenly sized bliss balls.

  • Roll in prepared coconut and store in fridge.

Please note this mix also makes Choc Orange Bliss Balls or Choc Mint Bliss Balls, to create this flavour simply add 5-10 drops of peppermint food grade essential oil, or 3 tbsp of fresh orange juice (if doing so add less water).
